I thought I would share a great recipe that’s perfect for your summer menu. You can whip up a fantastic dinner without heating up your kitchen. Grab a bag of Cooked Perfect Meatballs and fire up your grill. You can have dinner on the table in a flash. If your family is anything like mine, they will absolutely devour this meal!

Grilled Meatball and Pepper Skewers

Grilled Meatballs & Pepper Skewers

Ingredients
  • Any style [i]Cooked Perfect®[/i] Meatballs, thawed
  • 1 red pepper, cut into 1-inch squares
  • 1 green pepper, cut into 1-inch squares
  • 1/4 cup apricot jam
  • 1/4 cup barbecue sauce
Instructions
  1. Heat grill to medium-high.
  2. Thread the peppers and meatballs alternately onto eight skewers (3-4 meatballs per skewer).
  3. Microwave the apricot jam in a small bowl for 15 seconds, add the barbecue sauce and stir to combine.
  4. Place the meatball skewers on the grill and brush with the sauce.
  5. Grill for 8-10 minutes, turning and basting with the sauce occasionally.
  6. Serve over rice or salad.
