Bacon Wrapped Armadillo Eggs

The big game is in just a few weeks. You guys know that my husband is a big football fan so we are hosting a get together with a big group of our friends who are also football fanatics. I am already planning the menu and getting my supplies ready for the big day.

I think if it were up to my husband, he’d have nothing but meat on the menu. Since my girlfriends will be here too, I don’t grant his request for a complete meat fest. But, there are a couple of recipes that I pull out that make everyone at the party VERY happy.

Whenever I make my Bacon Wrapped Armadillo Eggs, they always disappear within minutes! I learned a long time ago that the best thing to do is to prep a couple of batches that I can bake up over the course of the party. I mean how can you not love a cheese stuffed jalapeño that’s wrapped with delicious Farmland Homestyle Sausage that’s then wrapped with Farmland Bacon? It really is a phenomenal party snack!

Bacon Wrapped Armadillo Eggs

Ingredients
  • 12 oz Farmland Homestyle Sausage
  • 8 jalapeno peppers
  • 2 oz cream cheese, softened
  • 1/4 cup cheddar cheese
  • 8 slices Farmland Bacon
Instructions
  1. Preheat oven to 375º F.
  2. Mix the cheddar and cream cheese.
  3. Cut off the stems of the jalapeño peppers and use a knife or spoon to remove the seeds and membranes.
  4. Stuff the pepper with the cheese mixture.
  5. Flatten the Farmland Homestyle Sausage patty slightly so that it will easily wrap around the pepper. Make sure to cover the entire pepper.
  6. Wrap one slice of bacon around the sausage wrapped pepper, tuck the ends to secure.
  7. Bake in a 375º F oven for 25 – 30 min until golden brown and cooked through.
  8. Serve with ranch or your favorite dipping sauce.
