Sweet Ricotta with Fresh Berries

Christmas is just a few days away and I know you guys are probably making your last minute lists. There’s lots of prep and planning involved. You may even have guests that have arrived early, so you may already have started cooking up a storm.

Today I thought I’d share a delicious dessert recipe for Sweet Ricotta with Fresh Berries that’s made with Equal sweetener. Sweet Ricotta with Fresh Berries

Serves: 6
  • 1 cup purchased angel food cake, cut into ½-inch cubes
  • 2 cups fat-free ricotta cheese
  • 1½ cups light whipped topping, thawed if frozen
  • ¼ cup Equal® Spoonful OR 6 packets Equal® sweetener
  • Zest of 1 medium lemon
  • ½ teaspoon vanilla extract
  • 1 cup assorted berries (strawberries, blueberries, raspberries)
  1. Preheat oven to 350°F.
  2. Place angel food cake on baking sheet.
  3. Bake 13 to 15 minutes or until light golden brown.
  4. Remove from oven and cool completely.
  5. Meanwhile, combine ricotta cheese, whipped topping, Equal®, lemon zest and vanilla; mix well.
  6. Equally divide cake, ricotta mixture and berries between 6 small individual dessert glasses.
