Tomato Wheels

I am betting many of you guys are like me and stocked up on Jimmy Dean Fully Cooked Sausage last week with the awesome sale. I thought you might like a recipe that’s not only easy but it’s absolutely delicious – Tomato Wheels!

Now you can easily modify this recipe based on how many “wheels” that you need. Drop it down to just a few using one tomato or bump it up to a bunch using 5 or more tomatoes! It’s super simple to edit based on what you need.

I love these as a quick and easy low carb lunch option that I can have done in a flash.  Even my husband loves these and will request them with scrambled eggs and toast on occasion. So I guess they are a good breakfast option too! Honestly, I’d eat them anytime of the day!

Ingredients
  • 4 oz Jimmy Dean® Sausage Crumbles
  • 4 oz cream cheese, cubed, softened
  • 2 large tomatoes, cut into thick slices
  • 2 ounces shredded cheddar cheese
  • 1/4 cup chopped pickled jalapeño peppers
Instructions
  1. Preheat oven to 350°F.
  2. Heat Jimmy Dean Sausage Crumbles then stir in cream cheese.
  3. Place tomato slices in single layer in shallow baking pan; spread each slice with about 2 tablespoons sausage mixture.
  4. Top with cheddar cheese and peppers.
  5. Bake 10 minutes; remove from oven. Broil, 4 inches from heat, 3-5 minutes or until cheese begins to bubble and is lightly browned.
