Stuffed Mushrooms

I love appetizers! There is something fun about little finger foods that makes me happy. Maybe because the recipes are usually fairly easy or maybe it’s because you don’t need utensils? Either way…I have been known to do appetizer-only dinners on more than one occasion! Obviously I have passed down my appetizer love to my boys because they will specifically request their favorites to be made as a main dish or side dish with dinner a few times each week!

A big family favorite is stuffed mushrooms. I have at least 6 or 8 different stuffed mushroom recipes but this one is probably the top requested recipe! As you can see…these are my OVERstuffed mushrooms — this recipe is made with Jimmy Dean sausage and cream cheese and it’s fantastic.

Now I have a habit of changing up recipes based on my needs. The original recipe on the Jimmy Dean recipe page makes a huge number of servings…like the amount you’d need if you were throwing a party. I have made that recipe many times and it’s fantastic…but it just doesn’t work for my 4-person-dinner-on-a-Thursday-night meal. So I just modified it a bit and came up with a version that does work. It’s super easy and just as delicious. Instead of Jimmy Dean roll sausage, I use Jimmy Dean Crumbles. The Crumbles are super convenient! It’s fully cooked so you cut down on your prep time and you can just use a little bit of the bag and then zip up the rest to save and use for your other recipes/meals.

Just toss the sausage in with the chopped mushroom stems and it takes maybe 5 – 8 minutes to heat the sausage and cook the mushrooms. That’s usually how long it takes my oven to pre-heat! Then mix in your cheeses and parsley and then stuff it in those mushroom caps. A quick sprinkle with some cheesy breadcrumbs and you are ready to toss them in the oven.

Be aware that the smell will draw a crowd. I usually have to pop my husband’s hand as he’s typically reaching for one right as I am pulling them out of the oven.

Easy Stuffed Mushrooms – Quick And Simple!

Ingredients
  • 8 oz baby bella mushrooms, stems removed and chopped
  • 6 oz Jimmy Dean Sausage Crumbles
  • 1/4 teaspoon garlic powder
  • 2 ounces cream cheese, cubed, softened
  • 2 tablespoons Seasoned Panko bread crumbs
  • 2 tablespoons Parmesan cheese, divided
  • 1 teaspoon chopped fresh parsley
  • 1/4 teaspoon olive oil
Instructions
  1. Preheat oven to 350°F.
  2. Place mushroom caps, rounded-sides down, in lightly greased shallow baking pans.
  3. Add sausage, chopped mushroom stems and garlic powder in large skillet and cook over MEDIUM-HIGH heat for 5 – 8 minutes or until mushrooms are soft.
  4. Add cream cheese, 1 tablespoon Parmesan cheese and parsley; mix well. Spoon into mushroom caps.
  5. Combine breadcrumbs, remaining Parmesan cheese and oil; sprinkle over mushrooms.
  6. Bake 20 minutes or until mushrooms are tender and stuffing is lightly browned.
