Peppercorn & Garlic Pork Tenderloin Salad--You guys are always asking for quick and easy dinner suggestions and today I have the perfect recipe that will take you less than 20 minutes from start to finish!

It starts with Smithfield Marinated Pork. This salad uses the Peppercorn & Garlic Tenderloin which pairs perfectly with the the other ingredients in this meal. The tenderloin is perfectly seasoned so you don’t have to worry about taking time to marinade the meat. You don’t even have to add salt or anything. You simply slice it, add it to the pan and it cooks up in just minutes. Then just put together a salad and what did I tell you…20 minutes to dinner. Heck, you’ll even have time to set the table too!

The great thing about this recipe is that it offers something for everyone. The hearty meat is packed with bold flavor. Paired with the lightness of the salad, it’s really is a perfect warm weather meal. If you wanted to change it up a bit you could also grill the Smithfield tenderloin and it would be phenomenal.

Peppercorn & Garlic Pork Tenderloin Salad

Serves: 4 – 6 servings
Ingredients
  • Smithfield Peppercorn & Garlic Pork Tenderloin
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon honey dijon mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1 large garlic clove, minced
  • 1/4 cup balsamic vinegar
  • 3/4 cup extra virgin olive oil
  • Mixed lettuce greens, washed
  • Cherry tomatoes, halved
  • Pears, cut into thin slices
  • Toasted walnuts, chopped
  • Blue cheese, crumbled
Instructions
  1. Make your balsamic dressing by placing the honey, honey dijon mustard, salt, pepper, garlic, balsamic vinegar & olive oil in a bowl and whisk together until emulsified, set aside.
  2. Cut the Smithfield Peppercorn & Garlic Pork Tenderloin into 1/2 inch medallions.
  3. Heat the olive oil in a large skillet over medium high heat.
  4. Pan sear the pork medallions for about 3 minutes until golden brown then flip and cook an addition 3 – 4 minutes until cooked through (until internal temp is 150º.) Remove to plate and keep warm.
  5. Add the lettuce to a large bowl or plate and top with the tomatoes, pears, walnuts and blue cheese.
  6. Add the cooked pork and drizzle with the prepared balsamic dressing.
