Turkey Pesto Panini copy

Who says sandwiches are just for lunch? I’ve mentioned before that this is the busiest time of year at my house. With all the extracurricular events that my boys have going mean that often dinner time is crazy! Let’s take tonight for example…I will pick up Jeb from school and we’ll get home around 4:05. I have to grab him a snack then we have to jump back in the car at 4:30 so that I can have him at his 5 pm tutoring session.

Meanwhile, my husband will have to get to the school by 5:15 to pick up Jake from Science Olympiad practice. Jake will have to have a heavy snack in my husband’s truck and they will go straight to the baseball field as Jake has to be there by 5:30 for a 6 pm game.

Once tutoring is over, I’ll take Jeb and we’ll go watch Jake play. The game will probably end around 7:45 so Jeb and I will sneak out a few minutes early to go home and get dinner ready.

On days like today, I go with quick and easy meals like a Turkey Pesto Panini. It takes me maybe 5 minutes to assemble and then it’s just a matter of putting them on my panini grill. As you can see these are not your every day boring sandwich. I make mine with Hillshire Farm Naturals Slow Roasted Turkey Breast, sharp cheddar all rolled in a yummy spinach wrap.

Turkey Pesto Panini

Ingredients
  • 1 tub Hillshire Farm Naturals Slow Roasted Turkey Breast
  • 4 spinach wraps
  • 4 slices sharp cheddar cheese
  • 1/4 cup pesto (try my [url href=”https://www.old.iheartpublix.com/2013/06/publix-super-meals-create-a-sandwich-with-my-fabulous-pesto-recipe/” title=”Publix Super Meals – Create A Sandwich With My Fabulous Pesto Recipe!”]homemade Pesto recipe[/url])
  • thinly sliced red onion
  • lettuce & tomato
Instructions
  1. Spread a tablespoon of pesto over the wrap.
  2. Tear the cheese in half and lay down the middle of the wrap lengthwise.
  3. Add 2 oz of turkey on top of the cheese.
  4. Top with onion, lettuce and tomato.
  5. Gently fold the sides over the filling then roll the wrap, tucking the sides as needed.
  6. Place on a hot panini and grill for 3 – 5 minutes.
Notes
[i]You can also heat in a skillet. Place a second heavy skillet on top of the panini to press the sandwich. Flip once to heat both sides.[/i]
