Pork Satay with Peanut Dipping Sauce

Pork Tenderloin is on sale this week at Publix and there is also an in-ad coupon…you had to know I was going to do a recipe with it. I considered just sharing a super easy roasted tenderloin but I decided to give you guys this recipe for Pork Satay With Peanut Dipping Sauce.

This is also a super easy recipe and cooks up in a flash. The hardest part is waiting for your meat to marinade. Since the meat is pounded thin, it takes less than 10 minutes to grill up. The meat is tender and oh so tasty but I will be honest – the dipping sauce makes this recipe spectacular.

Pork Satay With Peanut Dipping Sauce

Ingredients
  • [u]Pork Marinade[/u]
  • 1 pound pork tenderloin
  • 1 tablespoon red chili paste
  • 1/4 cup coconut milk
  • 1/2 teaspoon cumin
  • 2 tablespoons cilantro, chopped
  • [u]Peanut Dipping Sauce[/u]
  • 1 cup smooth peanut butter
  • juice of 2 limes
  • 1/4 cup water
  • 1 tablespoon red chili paste
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
Instructions
[u]Pork[/u]
  1. Cut the pork into 1″ strips and pound until about 1/4″ thin and place in bowl or zip top bag.
  2. Whisk together 1 tablespoon of red chili paste, coconut milk, cumin and cilantro and pour over the meat.
  3. Allow to marinade in the refrigerator for a minimum of 1 hour.
  4. Thread the meat onto skewers and discard marinade.
  5. Grill for 3 – 5 minute per side or until cooked through.
[u]Peanut Dipping Sauce[/u]
  1. Place all the ingredients in a microwave safe bowl and stir to combine.
  2. Microwave on high for 45 seconds and stir again.
  3. Microwave for another 30 seconds then whisk until creamy and smooth.
