I was able to whip this up, help the boys with homework as it cooked and get it all cleaned up in time to get my oldest to baseball practice. This is definitely a busy mom’s kind of meal.

Easy Yellow Rice & Gwaltney Smoked Sausage Skillet – Easy Recipe + Great Deal At Publix

Ingredients
  • 1/2 teaspoon olive oil
  • 4 Gwaltney Smoked Sausage links, sliced
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 1/2 cups chicken broth
  • 8 oz package of yellow rice
  • 1 cup grape tomatoes, cut in half
  • parsley for garnish
Instructions
  1. Heat the olive oil in a large skillet.
  2. Add the chopped onions and sliced Gwaltney Smoked Sausage.
  3. Cook for 3 -5 minutes until the sausage starts to brown.
  4. Add in the garlic and cook for about a minute, until fragrant.
  5. Stir in the yellow rice and chicken broth.
  6. Bring to a boil then reduce heat and cover.
  7. Cook for 20 minutes and remove from heat.
  8. Allow to sit for 5 minutes while still covered.
  9. Fluff the rice with a fork and stir in the tomato halves.
  10. Sprinkle with chopped parsley and serve.
