Mac & Cheese Dog Casserole -Ok so I am not going to pretend like this is a gourmet recipe that I am sharing with you guys today. This is actually a modification of a recipe that my mom made for us quite often when I was little – Mac & Cheese Dog Casserole.

This is a very easy and economical meal that’s super kid friendly. It’s probably not a meal that I would serve at a dinner party…but if you have a house full of kids you’ll be the star of the show–tee hee.

Now my mom’s recipe was just a blue box of mac & cheese but I like this one better with a simple homemade cheese sauce. I prefer a baked mac & cheese and my sauce just adds a whole level of thick creamy goodness that you can’t get in the box version.

My mom always added bell pepper to her recipe so that’s what I know and what I love. My boys –not so much. I still add the bell pepper but allow them to pick it out when they eat. You can absolutely leave it out but again, it’s just not the same to me without it.

Ingredients
  • 8 oz macaroni noodles, cooked according to package directions
  • 12 – 16 oz package beef franks, cut into 1/2 inch slices
  • 5 tablespoons butter
  • 1/2 onion, chopped
  • 1/2 bell pepper, chopped
  • 1/4 cup flour
  • 2 cups half & half (or milk)
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon yellow mustard
  • 2 1/2 cups cheese, grated
Instructions
  1. Preheat oven to 350º F.
  2. In a large pan, melt butter on medium high heat and add onions and bell pepper.
  3. Cook the vegetables for about 3 – 5 minutes until softened.
  4. Add flour and cook an additional minute.
  5. Whisk in the half and half and stir until the mixture boils and thickens,
  6. Remove from heat and add salt, pepper, mustard and 2 cups of cheese.
  7. Stir the sauce until the cheese has melted.
  8. Add the noodles and franks. Stir to coat.
  9. Pour the mixture into a large greased baking dish.
  10. Sprinkle with the remaining cheese.
  11. Bake at 350º F for 20 minutes or until top is bubbly.
