Mother’s Day is just around the corner and one of the best ways to show mom that you care is with something homemade. My favorite cards are not ones that you can buy – they are those that my boys make using various types of paper, macaroni, glitter and lots of glue. I’ll take something homemade over something bought any day!

My idea of the perfect Mother’s Day is one where I get to sleep in and then let someone else do the cooking and cleaning. At my house Mother’s Day lasts all weekend. We usually spend Saturday with my mom and then on Sunday, I get the day off.

The boys always help me make a special treat to take to Grandma to go with her homemade cards. This year we are doing raspberry petits fours. These little cakes are just phenomenal and a perfect bite sized treat. I love making petits fours because you can make the cake ahead of time and then just add the icing before you are ready to serve them. Breaking up the task over different days makes the preparation a bit easier too.

With help from Betty Crocker®, I can make the prep of my petits fours even easier. I just whip up a couple of boxes of Betty Crocker® SuperMoist® Cake Mix and then I only have to make the icing the day I plan on taking them to my mom. Raspberry Petits Fours

Ingredients
  • 2 boxes of Betty Crocker® SuperMoist® Cake Mix (prepared according to directions) [i]I opted to do white and chocolate layers.[/i]
  • 4 pounds confectioners sugar
  • 1/2 cup corn syrup
  • 1 cup water
  • 1/3 cup melted butter
  • 1 teaspoon almond extract
  • 18 oz seedless raspberry jam
  • decorating items – such as Betty Crocker® Bakery Icing and Cupcake Gems
Instructions
  1. Prepare the 2 boxes of Betty Crocker® SuperMoist® Cake Mix according to directions then pour the batter into a half sheet pan lined with parchment paper.
  2. Bake for 30 minutes or until an inserted toothpick comes out clean.
  3. Allow cake to cool completely.
  4. Place raspberry jam in a microwave safe dish and heat for 30 seconds. Remove and stir. Return to microwave and heat another 30 seconds. The jam should just be warm and easy to spread.
  5. Reserve 2 tablespoons and spread the remaining jam over the top of one of the cooled cakes.

  7. Cut the cake into 2″x2″ squares.
  8. Prepare the icing by placing the sugar, water, melted butter, almond extract and 2 tablespoons of reserved jam in the bowl of a stand mixer.
  9. Beat on low until the sugar is moistened.
  10. Increase the mixer speed to high and beat until smooth.
  11. You may need to add additional water to get the icing to a pourable consistency.
  12. Place the cut cake squares on a cooling rack that’s over the top of a bowl or cookie sheet.   13. Spoon the icing over the top and sides of the cake squares.
  14. The excess will drip into the bowl/cookie sheet and can be reused if needed.
  15. Allow the cakes to stand until the icing has set, about 2 hours.
  16. Decorate with Bakery Icing and Cupcake Gems before serving.
