ham-bean-soup-2I have another super easy recipe for you guys today – Ham & Bean Soup.

This one is so simple because your crockpot does all the work. The hardest part is remembering to soak your beans overnight. From there you just dump everything in the pot. This is a great recipe for nights when you need dinner on the table with very little effort.

Beans are a super economical option. I always have several varieties on hand so it’s just a matter of planning ahead so you know to throw them in water before you go to bed.

Ham & Bean Soup Recipe

Ingredients
  • 1 pound dried Great Northern Beans
  • 1 ham hock or ham bone
  • 1 tablespoon salt
  • 6 cups water
  • 1 onion, chopped
  • 1/2 cup carrots, thickly sliced
  • 8 oz ham, diced
Instructions
  1. Clean beans and cover with water. Allow to soak overnight.
  2. Drain and rinse beans.
  3. Place the beans in a slow cooker with 6 cups water, salt and ham hock.
  4. Cook on low for 8 hours.
  5. About an hour before you are ready to eat, throw in the ham, carrots and onions and increase the temperature to high.
  6. Allow to cook for the final hour.
  7. Serve with cornbread.
Notes
[i]I prefer a thicker soup and use an immersion blender to chop some of the beans before I add the ham and veggies. You could also remove about a cup of beans and puree them in a blender then add back to the soup.[/i]
