My husband loves casseroles. Just throw everything in one pot and he is a happy guy! This recipe came about in my attempt to do a scalloped potato. My Cheesy Ham & Potato Casserole is a thick and creamy version of scalloped potatoes with the addition of ham and peas. It’s quite tasty!

I make a cheese sauce then pour it between layers of thinly sliced potatoes. It’s a very hearty recipe that is the ultimate comfort food casserole.

This one works best if you have a mandolin to cut those potatoes thin. If you cut them by hand you might have to adjust your cooking time to make sure your potatoes have time to cook in the oven.

Ingredients
  • 2 1/2 pounds potatoes, cut into 1/8th inch slices
  • 1/3 cup butter
  • 1/3 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon nutmeg
  • 1 cup shredded cheese (a good cheddar)
  • 1 1/2 cups heavy cream
  • 1 1/2 cups milk
  • 1 cup peas
  • 1 cup diced ham
Instructions
  1. Preheat oven to 400º degrees.
  2. Melt 1/3 cup of butter in large saucepan.
  3. Combine flour, salt, nutmeg then add to melted butter and whisk until smooth.
  4. Add milk and cream, stir constantly while cooking on medium high until mixture boils.
  5. Reduce heat to medium and continue to cook for 10 minutes while stirring constantly.
  6. Add cheese and stir until melted.
  7. Remove from heat.
  8. Spray a medium casserole dish with cooking spray.
  9.   10. Sprinkle 1/3 of the ham and 1/3 of the peas over the 1st layer of potatoes then pour 1/3 of the cheese sauce over that layer.
  11. Repeat the layers twice.
  12. Bake in a 400º F oven for 45 – 50 minutes until potatoes are soft and top is brown and bubbly.
Notes
[i]If you don’t have a mandolin to cut the potatoes super thin, you can cut thin slices with a knife. You might want to boil the potatoes for a few minutes before layering in the casserole so they will cook through.[/i]
