broccoli-ham-cheese-stromboli-3Here’s the first recipe as part of the Publix menu plan for the week (starting 2/27). As a reminder I am giving you guys 5 recipes that you can make for under $50 using the sale items at Publix.  You can see the menu HERE. Today I am sharing my simple recipe for Broccoli, Ham & Cheese Stromboli.

This is one of my favorite meals to throw together. I often make a stromboli for lunch on the weekends using whatever meats and veggies that I leftover from the week. You really can’t go wrong with whatever you throw in. I typically make my own pizza dough but with the Publix BOGO sale, I decided to give myself a break.

I chose this recipe because this is a great base recipe to throw together at any time. The filling can be almost anything. You can do leftover proteins or go vegetarian. The options are endless! Plus, this is a family friendly meal…I don’t know many kids who don’t love these. It’s basically a big pizza all rolled up. Keep this recipe in mind for weeks when you want to keep your budget small  but the taste big!

Ingredients
• pizza dough (store bought or homemade)
• 1/4 cup honey mustard
• 8 oz cooked ham, diced
• 1 cup mozzarella cheese, shredded
• 1 cup fresh broccoli, chopped
• 1 tablespoon parmesan cheese
• 1 tablespoon olive oil
Instructions
1. Preheat oven to 450º F.
2. Roll out the pizza dough into a large rectangle on a piece of parchment or on your pizza stone.
3. Place the ham, honey mustard, broccoli, and mozzarella cheese in a medium bowl and mix until combined.
4. Mound the mixture in the middle of the rolled dough.
5. You can now pull the sides of the dough over the filling and press to seal or you can create a braid by cutting slits in the dough and then alternating pieces across the filling – pressing to seal on the opposite side. (I use a pizza cutter to slice the strips in the dough. You can be as precise as you’d like. As you can see, I just kinda pull the strips across…it still turns out very pretty!)
6. Shape the stromboli so that you have a long loaf so it cooks evenly.
7. Brush the top with olive oil and sprinkle with parmesan cheese.
8. Bake in a 450º F oven for 25 minutes or until the crust is golden brown.
9. Slice and serve warm.
