With the P&G promotion for a FREE chicken and the sale on Smucker’s Preserves the first thing that came to my head was my favorite chicken salad recipe. I thought you guys might like a light summer salad that is packed with flavor that requires no cooking what so ever!  Now, I did bake up some chicken and dice it … so even if you are not picking up a rotisserie chicken you can do this one with just a tiny bit of cooking 😉

You guys know I am not a fan of mayo so most chicken salads out there are not my cup of tea. I decided to come up with something that appealed to me. The dressing for this salad actually came about through me trying to use up some leftover greek yogurt. I didn’t want to throw it out so I thought I’d whip up a salad dressing. It was so good…I decided it would be even better on a chicken salad! The tang of the yogurt and the sweetness of the marmalade work great together. When you combine it with the chicken, fruit, and nuts it’s just fantastic.

I typically use Granny Smith apples with my recipe but all I had on hand were Red Delicious. You can also use the nut of your choice. I have made it with walnuts and it is also very tasty. I am all about using what’s on hand. I typically eat this chicken salad rolled in lettuce leaves or on crackers…it’s so chunky that it’s bit hard to manage on bread. Chunky Chicken Salad with Orange Yogurt Dressing

Ingredients
  • 3 1/2 – 4 cups diced cooked chicken
  • 1 cup grapes, sliced
  • 1/2 cup celery, chopped
  • 1 cup apples, chopped
  • 1/2 cup pecans, chopped
  • 1/2 cup Greek yogurt
  • 1 lemon, juiced
  • 1 clove garlic, grated
  • 2 tablespoons orange marmalade
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions
  1. Add chicken, grapes, celery, apples and pecans to a large bowl and set aside.
  2. Place all other ingredients into a blender and pulse until emulsified.
  3. Pour about half the dressing over chicken mixture and toss to combine – add additional dressing until you get to the consistency you prefer.
  4. Chill until ready to serve.
Notes
More marmalade can be added to increase sweetness.
