Since my guys loved the pink lemonade cupcakes that I made, I decided to whip up a recipe with the pink lemonade cookie mix too! Instead of just doing the cookies, I decided to use the cookie as a crust for my husband’s favorite cheesecake. This is a cheesecake that his mother made for him every year for his birthday. It has a lemon flavor so I thought that it would work perfectly with the sweet and tart cookie. It turned out great and was a nice change of pace from the typical graham cracker crumb crust.

Pink Lemonade Mini Cheesecake

Ingredients
  • Pillsbury Pink Lemonade Cookie Mix
  • 1 stick of butter
  • 1 egg
  • 1 cup boiling water
  • 1 teaspoon vanilla
  • 1 box lemon gelatin
  • 3 tablespoons lemon juice
  • 8 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 12 oz can evaporated milk, chilled
Instructions
  1. Preheat oven to 375 degrees.
  2. Prepare cookies as indicated on the box (using butter and egg).
  3. Drop one teaspoon of cookie mix into lined cupcake pan and bake in 375 degreen oven for approximately 8 – 10 minutes or until set.
  4. Set aside.
  5. Dissolve gelatin in 1 cup boiling water.
  6. Add lemon juice and then set aside to cool.
  7. Using a mixer, cream together cream cheese and sugar.
  8. Add cooled gelatin mix to the cream cheese mixture and mix well.
  9. In a large bowl, whip evaporated milk to soft peaks form.
  10. Gently fold cream cheese mixture into whipped milk.
  11. Pour into cupcake liners with the cooled cookies.
  12. Chill until set – approximately 3 hours.

  5. I just made these. I had a lot of the cream cheese mixture left over. I don’t know if I did something wrong. I guess we will find out in about 3 hours. If anyone has any suggestions on what I did wrong, please let me know.
