This week I checked out the ad and decided on a delicious sandwich. This is what I call a dinner sandwich. It takes a little more effort than a lunchtime PB&J…but oh boy –  is it ever worth it!

You guys know that I am not a mayo person but, I am not a fan of a bland dry sandwich either. That means I have to be creative and look for other spread options. This week my spread of choice was pesto!

My mom had given me a bunch of basil from her garden and I had a bunch from my organic produce delivery. I didn’t want it to go bad, so I decided to whip up a delicious batch of pesto. It is so easy to make pesto and it stores really well in the fridge or freezer.

I thought that I would share my recipe so you guys could whip up a batch. It is sure to make your next sandwich or pasta dish a family favorite.

My Turkey Pesto Flatbread Sandwich included my pesto, some Publix turkey, bacon, cheese, red onion, lettuce and tomato. I threw it on my panini maker and I won’t lie…I ate that whole sandwich that you see above. It was fantastic.

Homemade Pesto

Ingredients
  • 3 cups fresh basil
  • 1 – 2 cloves garlic
  • 2/3 cups olive oil
  • 1/4 cup pine nuts or walnuts
  • 1/2 cup parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
Instructions
  1. Place basil, garlic and pine nuts in a food processor and pulse until chopped.
  2. Drizzle olive oil into mixture pulsing until smooth.
  3. Remove to bowl and add parmesan, salt & pepper, stirring until combined.
  4. Serve with your favorite pasta or as a spread.
  5. If not using immediately, store in an airtight container with a thin layer of olive oil on top of the pesto.
