Yesterday I shared a Mother’s Day breakfast idea. Now I have a great dinner option – Asian Salmon with Ginger Rice.

Let me just tell you – this meal tastes like one you would get at an expensive restaurant, but you can make it for a fraction of the price at with this week’s Publix sale prices.

Besides being extremely economical, it is one of the easiest recipes you can make. This is one of those meals you’ll want to pull out when you want to impress guests. The taste is fantastic and no one has to know how simple it really is!

Asian Salmon With Ginger Rice

Ingredients

  • [u]Ginger Rice Ingredients[/u]
  • 1 teaspoon butter
  • 1 teaspoon sesame oil
  • 2 tablespoons fresh ginger (peeled and minced)[br] [i]Tip: Freeze ginger and use a grater – so much easier![/i]
  • 1 cup rice
  • 1 1/2 cups chicken stock or chicken broth
  • 1/2 teaspoon salt
  • [u]Asian Salmon ingredients[/u]
  • 2 pounds salmon
  • 2 tablespoons honey dijon mustard
  • 3 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 6 tablespoons extra virgin olive oil
  • 1/2 teaspoon fresh ginger (peeled and minced)
  • 1/2 teaspoon minced garlic
Instructions
[u]Ginger Rice Instructions:[/u]
  1. Combine all ingredients in a medium saucepan.
  2. Bring to a boil.
  3. Cover and reduce heat.
  4. Cook for 20 minutes or until rice is tender.
  5. Garnish with cilantro and/or sesame seeds.
[u]Asian Salmon Instructions:[/u]
  1. Combine mustard, soy sauce, brown sugar, olive oil, ginger and garlic.
  2. Whisk to combine.
  3. Pour half of marinade over salmon and reserve the remainder.
  4. Refrigerate fish in marinade for 10 minutes.
  5. Remove fish from marinade and place skin side down on hot grill for 4 minutes.
  6. Carefully flip fish and cook an additional 4 minutes.
  7. Remove from grill, brush with reserved marinade and allow to rest for 8 – 10 minutes.[br] [i]Tip: I like to add about a tablespoon of Ponzu sauce to the reserved marinade. The sauce is wonderful drizzled over rice and veggies as well.[/i]

I pulled out my mandolin to grate up some carrot and broccoli and steamed it for about 2 minutes. My guys all love this meal – even my 5 and 7 year old boys! It really is that good.

The marinade is so easy and just delicious. I typically drizzle it all over my fish, rice and veggies. It reminds me of one of my favorite meals at a restaurant in Chattanooga…just without the $20 price tag! I can feed my whole crew for less than it would cost for one plate!
