Laurie over at Passionate Penny Pincher shared a great recipe this week – Buffalo Chicken Casserole.
You guys know my husband is a casserole fanatic. I am not sure why he thinks everything thrown into one pan is somehow better than served individually…but he honestly does?!
The Buffalo Chicken Casserole has his name all over it. This is not one that the boys would eat, so I’d probably have to bake them a breast as a replacement. I think I will give this one a try. I had to laugh as Laurie and I seem to have a similar meal ranking system. She said her husband “ranked it as good-enough-to-make-again.” That’s the measure of a good meal at my house too – tee hee!

Made this yesturday with a couple of tweeks. Used boneless skinless chicken thighs because thats all I had. I also used potatos obrian which was great. I also used fat free campbells chicken condensed soup because thats all i had. Also didnt have ranch so i substitued 2 tbsp mayo. Turned out great. Love this recipe because I can tweak to whatever I have on hand.

I made this tonight, and it was quite a success with my family of six! There’s barely enough left for me to eat for lunch tomorrow! I followed the recipe to a tee, but I think next time, I may add more hashbrowns. 🙂 It was surely delicious, though! Thanks for sharing!
