I had made almost all of her recipes and have NEVER been disappointed. Some of the recipes are now on a pretty regular rotation here at my house. When I whip up her chicken satay my guys just about flip – it is so good.
Today she has a fantastic dish that is calling my name – Chicken Black Bean and Red Pepper Enchiladas with Smokey Garlic Cream Sauce.
She said she came up with it out of necessity. Because she hasn’t been able to shop, she pulled this together with ingredients from her pantry. Read over the recipe, I think you guys will all agree it sounds wonderful. I am going to give it a try and use the greek yogurt instead of sour cream. I am making myself hungry!
