Laurie over at Passionate Penny Pincher sent over her recipes for the week. Once again Laurie has opted to put that slow cooker to good use. I can’t blame her, mine is has also been getting a work out too.
Laurie said she has a recipe for a fantastic roast. I think I have told you guys before that I have yet to find a really good roast recipe. I keep trying new ones in hopes that I finally find something that I will actually make again! I am willing to give this one a go –
One real secret to making a good roast is to trim the fat off before you cook it. The fat puts a bad flavor into the meat over the long cooking time. I have never understood why cooking a roast is so difficult for everyone. I just do it the way my Mom always did it and it is always good. If you are doing a roast in the crockpot all day do not put the veggies in at the beginning or they will be mush by supper time.

a really good all purpose seasoning… great on roasts, great in casseroles, stews, etc… I bought it by accident once (trying to buy a seasoning my husband needed, but I couldn’t quite remember what it looked like)
and now I cannot live without it.

Our favorite roast recipe is 1 can of beef broth, 1 packet of zesty italian salad dressing mix and 1 packet of au jus mix. Mix together and pour over a 3-4 lb. chuck roast. We’ve found that the chuck roasts are the best cut as the other cuts don’t get as tender.
For the last hour we roast potatoes and carrots with olive oil and italian seasonings for 400. Yummy! We’re ALWAYS watching for a good sale on chuck roast.
