Tamale Pie from morgan
1.5 pounds ground beef (or turkey or chicken or sausage)
1 small yellow onion, chopped
1 can Rotel (you choose what heat level)
1 can corn (drained),
1 can chili beans (or black beans or kidney beans – choose what you like!)
1 packet taco seasoning
1 packet dry ranch dressing mix
2 boxes Jiffy corn mufin mix ( 2 eggs and 2/3 c milk for mixes)
Preheat oven to 350 degrees
Brown meat and onions until cooked through
add all canned veggies and both packets dry mix to pan w/ meat onion mixture.
Once heated through, put in 9×13 pan. Prepare Jiffy mix as per directions on box. Drop by spoonfulls and spread on top of tamale pie in pan. Bake until top is browned and corn muffin top is cooked through. (roughly 20 minutes-ovens vary).
remove from oven and enjoy!
