I am excited that it’s a holiday weekend and I bet you guys are too! We have a party planned for tomorrow. It’s a combination birthday/football party. Jeb’s birthday was a few weeks ago but I wanted to let the kids get settled into school before I threw a party. Tomorrow is also the first Alabama football game for the season. You guys know my husband is a HUGE fan…so many of our guests will transition from the pool down to the man cave to watch the game. That means I have all kinds of party snacks and such to prep tonight. I am keeping things simple as I plan on enjoying the parties too!

As you can imagine most of my shopping this week was geared towards the party. I do separate those purchases out from my everyday grocery budget. You know I am a planner and crazy organized with all kinds of spreadsheets that track spending in all my various categories. It helps me know where my money is going and is super helpful for planning for the upcoming year. So while I did buy guacamole, chips, hummus, juice boxes, fruit and more…it will be “charged” to the entertainment fund and not my grocery fund.

One funny thing that is going to be part of my grocery totals this week is a massive expense on grapes. My buddy Amy emailed asking if I had ever tried those Cotton Candy Grapes that are currently at Publix. I was intrigued and checked them out when I shopped. I passed them up they are crazy expensive (at least for thrifty me) and priced at $3.99/lb.

My husband and I had to take care of some paperwork for the sale of our Georgia house this week and I talked him into shopping with me while we were out and about. Well, I guess I should have taken him home first–tee hee. We were in the produce section and I saw the grapes and showed them to him and he just HAD to have those grapes. I told him to get a small package in case they weren’t good.

He grabbed a bag and tossed them in the cart with my other stuff. It wasn’t until I got home and started looking at the receipt that I noticed that small bag of grapes were $8.98 – HOLY MOLY!! Ok – they were quite amazing as they did taste like cotton candy but crazy me starts thinking about what all I could have got with that $9 instead. Seriously I could have got a whole meal for that amount.

You better believe I threatened him with loss of life if I found any signs of uneaten grapes rotting in my fridge next week –tee hee.

So while I would have done pretty good on my weekly grocery totals…those grapes kinda did me in! Still not a bad week as we didn’t need a ton of groceries. As you might remember from my menu this week, I went with cost effective easy meals! For my shopping trip I was more focused on getting the party supplies at a nice price instead.

I can’t tell my exact total but for recording purposes, I estimated that I spend $40 for our groceries this week. Not bad overall if you ignore the fact that the grapes were about 1/4 of that –tee hee!

April sent in the following question and I thought you guys would have some great ideas for her. She says:

I had my gallbladder removed ten days ago and have to change my diet to all whole grains, fruits, veggies and lean meats. I cleaned out my cupboards and got rid of everything that didn’t fall into either category. Needless to say, I now need to rebuild a stockpile.

Do you have any suggestions on how to go about this? I am finding it more expensive and limited than I’ve ever shopped before. I am using the $5/$30 Winn Dixie coupons, but am finding it hard to find coupons for healthier foods. I no longer will eat out, so I will have a strict grocery budget and not a “food” budget. All in all, it’s a good thing for my health and for my wallet.

Any advice? I am still recovering and just off my coupon game. I don’t even know what products to really look for. I picked up Boca Burgers since I’ve had them before. Trying to find brands and coupons for this new lifestyle is almost as painful as that darn 2 cmm stone was!

If you have been checking out my recipes, you might start to notice that I have a slight obsession with hand pies. There are so many reasons to love those little bread pockets. They are super simple to put together and they bake up very quickly. The options are endless – you could make a different version for every day of the week! Plus, you get to play with your dinner…gotta love handheld food.

I never saw or ate a Hot Pocket until I was in college. My mom never bought frozen convenience foods so it just wasn’t something we ate when I was young. Truth be told, I don’t think my boys have ever had one either. I am sure they’d love them, but since I can make a whole batch for a fraction of the cost, I opt for the homemade version.

The recipe I am sharing today is a good one for days when you need dinner in a flash. This recipe for Shortcut Pulled Pork Hand Pies is a great way to use leftover pulled pork. If you don’t happen to have leftovers…no worries! Just throw a Boston Butt in your slow cooker in the morning and then you just need another 25 minutes to prep and cook the hand pies for dinner.

This recipe is part of the Publix Menu Plan Week Of 8/28. Here are the other recipes that I have shared so far this week -

Shortcut Pulled Pork Hand Pies

Ingredients
  • 1½ cups shredded pork
  • ¾ cup sweet barbecue sauce
  • ¼ cup fresh cilantro, chopped
  • ½ medium red onion, chopped
  • ½ cup Monterey Jack cheese, shredded
  • can of refrigerated biscuit dough (large Grands type biscuits) or pizza/bread dough ball
Instructions
  1. Preheat oven to 350º F.
  2. In a medium bow, mix the pork, barbecue sauce, cilantro, onion and cheese until combined.
  3. Press or roll out the biscuits until they are large flat circles - approximately 2½ times the regular size.
  4. Add ⅓ - ¼ cup of the meat mixture in the center of the dough.
  5. Fold the dough in half and pinch the edges until sealed (use a fork to crimp the edges).
  6. Brush the top with olive oil or an egg wash.
  7. Bake for 15 - 20 minutes or until golden brown.
Notes
Homemade pulled pork is very simple. All you need to get started is a 3 pound Boston Butt and the dry rub of your choice. You can use a pre-made blend, create your own or you can even just use seasoning salt and pepper. I use a blend called Bad Byron’s Butt Rub Barbecue Seasoning - it’s delicious.
You want to coat your roast pretty heavily and then pop it in the slow cooker – nothing else needed! Remember to season it good…that’s a big chunk of meat and will need some flavor. Stick the cover on your slow cooker and turn it to low and let it go for about 12 hours.
