Today’s Reader Spotlight comes to us from Carmen, who turned to couponing for a bit of a different reason than many of us have…but with the same great results! Take it away, Carmen!

My name is Carmen and I own a horse training stable. The price of grain and hay has tripled in the last 3 years. I realized I was going to start running my business in the red and started looking for ways tomsave a little money.

I always shop at Publix, as my husband works for them, and usually shop the BOGOs. I never used coupons but stumbled on your facebook site. As I read and started really getting organized with my coupons and weekly flyers, I am thrilled at my savings and great stock pile of items.

Because I show horses with my students, things at the concessions are very expensive. Waters, sports drinks, and snacks are one of the first things on my list. After 2 months of couponing, I am saving a consistent $150.00 a week. Wow, I just cant believe how easy it really is! I have razors, soaps, shampoos, paper products and cleaning stuff for 6 months. We also have a big freezer so any frozen BOGOs, I stock up on too.

Thank you for all the savings! What I save on our food pays for the grain every week for my horses!

You must have your purchase made by 4/30. That means there’s about two weeks left to earn those gift cards!

As a reminder, you will earn a $10 Publix gift card, when you spend $30 on participating frozen products between 2/1/2014 and 4/30/2014. Just submit your receipt(s) online and your gift card will be mailed to your address. Remember, you can earn up to 5 cards for a total of $50 in Publix gift cards!

You can stock your freezer with some great products and earn a gift card to boot. Keep in mind that you don’t have to buy everything at once. You can make your purchases over several trips…just remember to enter those receipts!  To qualify, just  purchase any of the following frozen items. As long as you are shopping in the frozen aisle you can grab any variety or product from these brands -

  • Marie Callender’s®
  • Healthy Choice®
  • P.F. Chang’s®
  • Bertolli® FROZEN

The submission process is simple. You create an online registration and upload your receipts. Your submission will be reviewed within about 24 hours and your account will be updated. Most of us are very used to uploading our receipts for the various cash back apps and such…this one is just as simple. If you prefer not to upload or don’t have the capability,  you can absolutely still participate. They have info on the page on how to submit your receipts via regular mail.

As a reminder, here are the easy steps to earn your Publix gift card(s):

  • Complete the easy registration.
  • Go to your local Publix store from 2/1/2014 through 4/30/2014 and purchase any Marie Callender’s®, Healthy Choice®, P.F. Chang’s®, and Bertolli® FROZEN products and KEEP YOUR RECEIPT(s).
  • Take a picture of your receipt that includes all of the necessary detail.
  • Access your account and upload your receipt(s).
  • See the FAQ’s for a mail-in option.

All the specific are laid out in the FAQ’s. Don’t forget, if you use a coupon on any of the participating items, the coupon amount will not be subtracted from the amount you are claiming. That means you can stock your freezer at a great price AND earn your gift card(s).

Mediterranean Couscous Salad With Salmon

It is so simple to prepare and you can do so much with it.  I use it in dishes where I might normally do pasta or rice. If you are watching your waist line this is a very good choice AND it only takes 5 minutes to prepare – win/win!

I especially love the combination of fish and couscous – it goes together perfectly. Toss in a few veggies and a drizzle of a good balsamic vinaigrette and you have a meal that will have your taste buds doing a little happy dance. The recipe I am sharing today is very versatile. I think you guys will love my Mediterranean Couscous Salad With Salmon. You can toss in whatever veggies you have on hand and this one can be on the table in less than 30 minutes.

Both salmon and couscous are on sale next week at Publix. So keep this one in mind when you are creating your shopping list.

Ingredients
  • 1 pound salmon
  • ¾ cup cooked couscous (cooked according to package instructions)
  • 1 cup zucchini, cubed
  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons crumbled feta
  • 2 tablespoons Kalamata olives, sliced
  • 1 tablespoon honey
  • 2 tablespoons balsamic vinegar
  • 3 oz extra virgin olive oil
  • ½ tablespoon dijon mustard
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • lemon
  • 1 garlic clove, minced
Instructions
  1. Prepare the dressing by combining the honey, balsamic vinegar, olive oil, dijon mustard, garlic, salt and pepper.
  2. Whisk until combined and dressing is emulsified. Set aside.
  3. Lightly brush the salmon with olive oil and sprinkle with salt and pepper, grill for 3 -4 minutes per side.
  4. In a skillet, heat 1 teaspoon of olive oil and cook the zucchini cubes until tender – about 3 minutes.
  5. Toss in the spinach and cook until wilted – about another 2 minutes.
  6. Finally, add the tomato halves and stir to warm slightly.
  7. Add the couscous to the vegetable mixture.
  8. Serve the salad by topping with feta, Kalamata olives, and the grilled salmon.
  9. Drizzle with the a little of the prepared balsamic dressing and serve with a lemon wedge.
