Publix Frugal Focus – Portioning & Freezing Meat

41isRFqm86L. SY450  Publix Frugal Focus   Portioning & Freezing MeatEach week I thought it might be fun to focus on one frugal concept. It might be something from the ad, a tip from a reader or really anything. If it has a frugal focus that might help someone…then I’ll try to feature it.

This week I thought we’d talk about portioning meat prior to storage.

How many times have you bought a package of ground beef and thrown the whole pack in the freezer to use another day? Once you finally get around to using the meat do you end up tossing half of it in the trash? When you toss that food it’s like tossing money in the trash too! We all work so hard to keep our grocery budgets down, throwing money away is the last thing we want to do.

By planning ahead and taking a few minutes to pre-portion and package your meat you can save big.

The easiest way to start is to have an idea of what you plan to do with the various meats you purchase. While you may not know exactly what every single item may become, you’ll want to have a general idea. For example, I package ground beef into half pound and pound packages. When I make hamburgers for dinner, I need a full pound of meat to feed my family. When I make spaghetti or casseroles, I only use a half pound of ground beef. Because I have the meat pre-portioned I can pull out only what I need each morning for my dinner that night.

By knowing how I use the meat and my family’s consumption I can make sure nothing goes to waste.

I do the same with all meats. I even take a few minutes to prepare some foods before I freeze them. I will often cut chicken into chunks or strips for kabobs and casseroles before I toss them in my FoodSaver bags. That way half my work is already done! Note: I can chop foods into smaller pieces and freeze using my FoodSaver but this is not a good option if you use traditional plastic wrapping or storage bags. 

Another big part of packaging your meat is making sure it is in proper packaging. While you can just use the original packing that you get at Publix, you may want to consider a more sturdy option. Store packaging is not super thick and is permeable to air. So while the meat may be ok for a short period of time, the quality may diminish over time. You may also notice freezer burn to occur at a faster rate. To keep out the air you need to make sure to wrap your meat or store it in a bag designed for freezer use. I use my FoodSaver and have found this to be my preferred method. If I just need to store the food for a few days I might wrap in plastic wrap and then toss in a freezer bag.

You want to freeze your meat as quickly as possible to maintain the best quality. I have a spot in my freezer where I place new items so they will freeze quickly. Once frozen I add the items to the various similar “stacks” in back of the freezer. It takes a few minutes but I try to make sure the newer foods go in behind the older foods so that first in goes out before the new additions.

Publix Super Meals – Barbecue Pork Sandwiches

With the great deal on Boston Butt Roasts this week, I just had to do Barbecue Sandwiches. Now these are not your standard boring sandwiches – I made a kicked up version that will have your whole family cleaning their plates and asking for more!

There are lots of ways to cook up a Boston Butt Roast. I chose to smoke mine on the Big Green Egg at 250 degrees for 1.5 hours per pound until the internal temp hit 190 degrees. Just rub the pork with your favorite dry rub and let it go. Once you take it off the smoker wrap the roast in foil for an hour. Now, this is an all day process but oh so worth it.

Don’t have a smoker? Just rub the roast with your favorite rub and pop it in a 300 degree oven and cook about an hour per pound (or until the thermometer reads 190). You can also cook it in your crockpot on low for 8 – 10 hours. Lots of options – and definitely worth the effort.

Now, the meat is just one component of these fabulous sandwiches. The next layer is a delicious slaw. You guys might remember that I am not a mayonnaise person. So my slaw is made with vinegar instead of mayo. This slaw is best if it is allowed to chill in the fridge for a few hours. I typically make it once I get my roast going. Knock it out in the morning and you’ll be able to assemble dinner quickly.

Ingredients
  • ¾ cup olive oil
  • ⅓ cup red wine vinegar
  • ½ teaspoon lemon juice
  • 1 teaspoon honey Dijon mustard
  • ¼ cup granulated sugar
  • ½ teaspoon celery seed
  • 1 teaspoon garlic, minced
  • 1 teaspoon shallots, chopped
  • ½ head green cabbage, julienned
  • ½ head red cabbage, julienned
  • ¼ cup carrot, peeled and julienned
  • 2 green onions, chopped
  • Salt and pepper to taste

Instructions
  1. Place all the ingredients through the shallots into a medium bowl.
  2. Whisk together until the dressing forms.
  3. Places the veggies in a large bowl and toss with the vinaigrette.
  4. Add salt and pepper to taste.
  5. Refrigerate for 3 -4 hours before serving.

Ok, so now you have your roast and your coleslaw ready – the last step is putting the pickles on your sandwich. My husband has decided that instead of plain pickles, he needs to have the crunch of fried pickles. I have to admit the addition of these really does make the sandwich oh so good!

Ingredients
  • ½ cup flour
  • ½ teaspoon cajun seasoning
  • 2 teaspoons cornmeal
  • dill pickle chips
  • peanut oil for frying

Instructions
  1. Heat the oil to 350 degrees.
  2. Mix the flour, seasoning and cornmeal in a small bowl.
  3. Dry the pickles and then dip in the batter.
  4. Shake off any excess batter and drop in the hot oil.
  5. Fry the pickles for about 5 minutes until golden brown.
  6. Remove to paper lined plate to drain.

Notes
You can add a ¼ teaspoon of cayenne pepper to kick it up a bit. I leave this out so my sensitive tongue 7 year old can enjoy these as well.

Add some shredded pork and top with your favorite barbecue sauce. Pile on some coleslaw and top with a few fried dill pickles. Seriously this is what summer barbecue is all about. Take this to your next block party and you are sure to go home with empty platters!

This is a great week to put this one together – you can pick up everything you need at Publix at a great price! Add in some pantry items and you can whip enough food to feed 8 at about  $2 – $2.50 per person. Did I mention that any pork leftovers can be used to whip up Cuban sandwiches – yum!

stretch dollar Reader Spotlight   A Life With CouponsToday’s Reader Spotlight comes to us from Kathy, who has been using coupons for 35 years. She got serious about couponing when she was stationed overseas, so she has a wealth of couponing-related experiences that are really interesting.

Take it away, Kathy!

I have used coupons on and off over 35 years as we have moved around the world. Where do you get coupons when you live overseas? Great question. When we lived in England, both my husband and I were active duty members of the Air Force, stationed at two different bases about five miles apart. My husband’s boss, had coupons mailed to him a couple times a month and he would bring in a huge manila envelop with them in it to share with others.

That was where I got serious about using coupons, as I had the opportunity to find coupons I could use on items I bought every one or two weeks when we grocery shopped. The local newspapers in England did not contain any coupons so we were unable to get any that way. I called my family (1987-1989) and asked them to send us coupons as well. The local Commissary and Base Exchange had coupons from time to time hanging on items in the stores, so we could grab one or two at a time. I usually saved $15-20 and thought that was decent.

We moved  back to Georgia where we have lived for the past 20 years. Over the years, I have changed how I shopped from buying just what we needed with maybe one extra tube of toothpaste to now stocking the items we use consistently with a small stock pile. The internet has helped me seek out web sites that have great information like I Heart Publix, as well as two other web sites I look at a couple times a week. Their information has helped me buy toiletries and snacks to send to my friends that are deployed for a fraction of the cost of the items, and then in turn I can use the money I saved to mail the packages.

Now I am couponing for just my family (husband, daughter in law, and son), and I buy some items for donation – our church has a food pantry we donate to each week, and sometimes I buy things for my daughter in law’s classroom and/or school.

At this point in my life, I still enjoy the hunt for great deals, but I do not go overboard as far as having a stock pile in excess of $2000 and up, nor do I buy the entire shelf of an item when I go into a store. I used to shop at many stores, but now I am pretty much dedicated to Publix as they have the great buy one get one free deals and in Georgia, I only have to buy one item as it rings up half price.

Couponing enables me to take the money I have and stretch it a lot further than if I paid full price and really make a difference in my own way. Some of my friends see couponing as bothersome or unneccessary–but to me, it is a way of life and something I enjoy doing.
