Chicken doesn’t have to be boring with tasty recipes like my Easy Chicken Piccata! This is a family favorite for the taste and the fact that it’s ready in a flash.

I don’t know about you guys but I get bored eating the same ol’ baked chicken. With a little Swanson® chicken broth, some lemon and a few capers, you can serve up chicken that’s beyond boring. Pair it with angel hair pasta or orzo and you have a meal that’s done in about 15 minutes!

Easy Chicken Piccata Recipe

Ingredients
  • 1 pound chicken tenderloins or thin cutlets
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup flour
  • 4 tablespoons butter, divided
  • 3 tablespoons olive oil
  • 1 1/2 lemons, juiced (appox 1/3 cup juice)
  • 1/2 cup Swanson® chicken broth
  • 4 tablespoons capers, drained
  • parsley for garnish
Instructions
  1. Sprinkle chicken with salt and pepper then dredge in flour.
  2. Heat 2 tablespoons butter and 3 tablespoons olive oil in a large skillet.
  3. Once hot, add chicken and cook for 3 -4 minutes – chicken should be lightly browned.
  4. Flip and cook for an additional 3 -4 minutes.
  5. Remove chicken from pan.
  6. Add chicken broth, lemon juice and capers to pan and stir. Bring to a slow simmer.
  7. Place chicken back into pan and simmer for 5 minutes.
  8. Remove chicken to serving dish.
  9. Add last two tablespoons of butter and whisk to combine.
  10. Pour sauce over chicken.
  11. Sprinkle with parsley and serve.
