Rustic Tomato Tart

How many times have you opened the refrigerator and stared inside hoping that some meal inspiration would magically happen? Weeknights are way too stressful to have to come up with dinner at the last minute. Planning out meals in advance is my trick to keep that hectic dinnertime scramble as stress-free as possible.

Each week, I ask my guys to help me come up with ideas on what to put on the weekly menu. It’s guaranteed that someone is going to request an Italian-themed meal. I typically grant their requests as I can’t pass up a tasty Italian dish myself.

Now that doesn’t mean that I spend all night in the kitchen, instead, I opt for quick and easy meals that are packed with big flavor. Recipes like this Rustic Tomato Tart is a fantastic option for a busy weeknight. The dish comes together quickly and offers amazing flavor that my whole family loves. I just add in a side salad and dinner is on the table in a flash.

Rustic Tomato Tart

Ingredients
  • 1 sheet refrigerated pie crust (half of typical package)
  • 2 cups (8 oz.) Sargento® Chef Blends® Shredded 6 Cheese Italian, divided
  • 1 cup pasta sauce
  • 2 large or 3 medium tomatoes, thinly sliced
  • 1/2 tsp. salt
  • 1/2 tsp. ground pepper
  • 1/4 cup assorted garden herbs roughly chopped, including basil, oregano, parsley, chives or thyme.
Instructions
  1. Preheat oven to 400° F.
  2. Roll dough flat and put into a round 9-inch fluted tart pan or 14 x 4-inch rectangular fluted tart pan. Dough should come to top of fluted lip. Freeze for 1/2 hour or overnight.
  3. Bake pie crust for 15 minutes. Sprinkle 1-1/2 cups cheese in bottom of pie crust and bake for 5 more minutes, until cheese is melted.
  4. Turn oven broiler on.
  5. Spoon sauce into bottom of pie crust. Layer tomato slices artfully over red sauce and sprinkle with salt and pepper. Add remaining 1/2 cup cheese and broil until melted and golden brown, about 5 minutes.
  6. Remove from oven, sprinkle with fresh herbs and serve.
