Zoodle Caprese Salad

Ingredients
  

Zoodle Salad
  • 2 large zucchini - cut into zoodles (approx 4 cups of zoodles)
  • 1 pint cherry tomatoes - halved
  • 8 oz Galbani® Fresh Mozzarella - cut into 1/2" cubes
  • 1/2 cup fresh basil - torn
Lemon Vinaigrette
  • 3 tbsp fresh lemon juice
  • 1 tbsp red wine vinegar
  • 2 tsp Dijon mustard
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/2 tsp fresh cracked black pepper
  • 1 clove garlic - minced
  • 1/4 cup extra virgin olive oil

Method
 

Lemon Vinaigrette
  1. In a small bowl, whisk together the lemon juice, vinegar, Dijon mustard, honey, salt, pepper and garlic. Drizzle in the olive oil while whisking and continue until emulsified. Taste and season with additional salt and pepper as needed.
Zoodle Salad
  1. Place the zoodles, tomatoes and Galbani® Fresh Mozzarella  in a large bowl and toss with the prepared vinaigrette.
  2. Top with torn basil, serve and enjoy!
