Whipped Lemon Ricotta Parfait

Ingredients
  

  • 15 oz GalbaniĀ® Ricotta - drained
  • 1/4 cup powdered sugar - more if you like it sweeter
  • zest of 1 lemon
  • 1/2 cup crushed graham crackers
  • fresh fruit

Method
 

  1. Placed the drained ricotta, powdered sugar and lemon zest in a food processor and allow to run for 2 - 3 minutes, until smooth and creamy.
  2. Divide the crushed graham crackers into the bottom of a dish. Spoon in about 1/4 cup of the whipped ricotta. Top with fresh fruit. Serve and enjoy!
