Watermelon, Feta & Rice Salad

Ingredients
  

LEMON VINAGRETTE
  • 1/4 cup fresh lemon juice
  • 2 tsp Dijon mustard
  • 1/2 tsp honey
  • 1 clove garlic - minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup olive oil
SALAD
  • 2 cups watermelon - cubed
  • 2 pouches  TILDA® READY TO HEAT PURE BASMATI RICE  - cooked according to package directions and cooled
  • 1/4 cup red onion - thinly sliced
  • 2 tbsp fresh mint - torn
  • 1 cup arugula
  • 6 oz feta - crumbled

Method
 

LEMON VINAGRETTE
  1. Place the lemon juice, Dijon mustard, honey, garlic, salt and pepper into a small bowl and whisk to combine. Slowly drizzle in the olive oil and mix until emulsified. Season to taste.
SALAD
  1. Add all salad ingredients to a large bowl and gently toss with the prepared lemon vinaigrette. Serve and enjoy!
