Tequila Lime Grilled Chicken

Ingredients
  

  • 6 boneless, skinless chicken thighs - approx 1.5 to 2 lbs
Marinade
  • 3/4 cup Hellmann's Mayonnaise
  • 1.5 oz tequila
  • 1 lime + additional for serving
  • 2 cloves garlic
  • 1 small jalapeño - seeded and membrane removed (+ additional for serving)
  • 1/4 cup fresh cilantro + additional for serving
  • 1 tsp salt
  • 1/2 tsp black pepper

Method
 

  1. Juice the lime into your food processor(or blender) and add the tequila, garlic, jalapeño, cilantro and salt and pepper into a food processor. Pulse until blended.
  2. Add the Hellmann's mayonnaise and pulse 2 - 3 times - just to combine.
  3. Add the chicken to a large plastic bag with the marinade. Seal and press the bags to ensure the chicken is completely coated.
  4. Marinate in the fridge for 4 - 6 hours, or overnight.
  5. Remove the chicken from the bag and grill over medium high heat for 6 - 8 minutes per side, or until cooked through.
  6. Sprinkle with chopped cilantro and serve with lime wedges and sliced jalapeño.
