Peach Vinaigrette
- Place all vinaigrette ingredients in a blender and pulse until blended and emulsified. Adjust seasoning as needed.
Salad
- Arrange the salad greens and arugula on a large platter or toss in big bowl.
- Top with the sliced peached and sliced red onion
- Scatter the walnuts, goat cheese and prosciutto over the salad and drizzle with the prepared dressing.
- Refrigerate any unused dressing.
