Sweet & Savory Summer Peach Salad

Servings: 4

Ingredients
  

Peach Vinaigrette
  • 1 large peach - pitted
  • 1/2 cup extra virgin olive oil
  • 4 tbsp Nakano® Rice Vinegar
  • 1 tbsp honey
  • 2 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp black pepper
Salad
  • 3 cups fresh salad greens 
  • 2 cups  arugula
  • 2 large  ripe peaches - thinly sliced
  • 1/4 cup red onion - thinly sliced
  • 1/4 cup toasted walnuts - roughly chopped
  • 6 oz goat cheese - crumbled
  • 4 oz prosciutto - torn

Method
 

Peach Vinaigrette
  1. Place all vinaigrette ingredients in a blender and pulse until blended and emulsified. Adjust seasoning as needed.
Salad
  1. Arrange the salad greens and arugula on a large platter or toss in big bowl.
  2. Top with the sliced peached and sliced red onion
  3. Scatter the walnuts, goat cheese and prosciutto over the salad and drizzle with the prepared dressing.
  4. Refrigerate any unused dressing.
