Preheat oven to 350°F.
In a large bowl, combine 1 cup diced strawberries, sugar and chopped mint. Let sit 10 minutes until juicy.
In a large bowl, whisk together flour, sugar, baking powder, and salt; set aside.
In a separate bowl combine milk, olive oil, egg, vanilla extract and lemon zest. Mix until smooth. Slowly fold wet mixture into dry ingredients. Gently fold the strawberry mixture into batter.
Pour into a greased 8-inch skillet. Top with remaining ¼ cup sliced strawberries.
Bake for 30 to 35 minutes until set but soft in the center. Cool 10 to 15 minutes before serving. Top skillet with 1 large scoop Talenti Mediterranean Mint Gelato.
