Sriracha Meatloaf

Ingredients
  

Meatloaf
  • 1 tsp vegetable or canola oil
  • 1 med onion - chopped
  • 2 tsp sesame oil
  • 3 cloves garlic - minced
  • 1 tbsp fresh ginger - grated
  • 3 green onions - chopped
  • 1.5 lbs lean ground beef
  • 1 lb ground pork
  • 3 tbsp TABASCO® Sriracha Sauce 
  • 1 cup Panko bread crumbs
  • 1/4 cup milk
  • 2 eggs - whisked
  • 3 tbsp ketchup
  • 1 tsp salt
Meatloaf Glaze
  • 3 tbsp TABASCO® Sweet & Spicy Sauce
  • 1 tbsp ketchup
  • 1 tbsp brown sugar
  • 1 tsp soy sauce

Method
 

  1. Preheat oven to 350º F. Line a large sheet pan with parchment.
  2. Heat the vegetable/canola oil in a medium skillet. Add the onions and cook for 2 - 3 minutes, until softened.
  3. Add the sesame oil, green onions, garlic and fresh ginger and cook an additional minute, until fragrant. Remove from heat and allow to cool slightly.
  4. In a large bowl, add the ground beef, ground pork, TABASCO® Sriracha Sauce, Panko bread crumbs, milk, eggs, ketchup and salt. Using your hands, mix until combined. Do not overwork the mixture.
  5. Place the meat mixture on the prepared sheet pan and use your hands to form a loaf. Bake at 350º F for 45 minutes.
  6. While the meatloaf bakes, create the glaze by mixing all ingredients until combined.
  7. Once the meatloaf has baked for 45 minutes, remove from oven and brush on the prepared glaze. Return to oven and cook another 30 - 40 minutes, until cooked through (160º F) and juices run clear.
  8. Allow to cool slightly then slice and serve. Drizzle with additional TABASCO® Sweet & Spicy Sauce if desired.
