Spicy Chicken Taquitos

Ingredients
  

  • 16 corn tortillas
  • 2 cups cooked chicken - shredded
  • 1/2 cup Hellmann's Real Mayonnaise
  • 1 tsp water
  • 1 tsp lime juice
  • 1/2 tsp chili powder
  • 1/4 tsp chipotle powder
  • 1/2 tsp smoked paprika
  • cooking spray or olive oil
  • 1 cup Monterrey Jack Cheese - shredded

Method
 

  1. Preheat oven to 400° F. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, mix the shredded chicken, Hellmann's Mayonnaise Dressing, water, lime juice, chili powder, chipotle powder, smoked paprika and shredded cheese. Set aside.
  3. Heat the tortillas in a skillet for a few seconds, just until pliable.
  4. Spoon about 2 1/2 tablespoons of the chicken mixture onto each tortilla and roll tightly.
  5. Place the rolled tortillas, seam side down, onto the prepared pan. Spray with cooking spray and bake for 15 - 20 minutes, turning at least once to ensure all sides crisp.
  6. Remove from oven and serve with additional toppings as desired.

Notes

For a quick and tasty dipping sauce, whisk 1/4 cup of Hellmann's Spicy Mayonnaise Dressing with the juice of one lime.  Serve and enjoy!
