Skillet Dijon Chicken

Ingredients
  

  • 1.5 lbs boneless skinless chicken breast or cutlets - pounded thin to about 1/2" thickness
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp butter
  • 4 oz mushrooms - sliced
  • 2 - 3 garlic cloves - minced
  • 1 small onion - sliced
  • 2 tsp fresh thyme - chopped
  • 1/2 cup white wine
  • 3 tbsp Sir Kensington's Dijon Mustard
  • 1/4 cup water
  • 1/3 cup heavy cream

Method
 

  1. Heat the olive oil in a skillet over medium hight heat.
  2. Season the chicken with salt and pepper and add to the skillet.
  3. Let the chicken sear for 5 minutes, undisturbed, then flip and cook for an additional 4 minutes. Remove to a plate.
  4. Add the butter to the pan with the mushrooms, garlic, sliced onions and thyme. Cook the vegetables for about 6 minutes, until softened.
  5. Stir in the wine and cook for 2 minutes, until slightly reduced.
  6. Whisk in the water and Sir Kensington's Dijon mustard.
  7. Add the chicken and any juices to the pan and cook for 1 - 2 minutes, until reheated.
  8. Remove from heat and add the heavy cream. Stir to coat the chicken and serve!
