SEA SALT & OLIVE OIL PASTA SALAD

Ingredients
  

HUMMUS DRESSING
  • 1/3 cup HOPE Sea Salt & Olive Oil Hummus
  • 1 tbsp Extra Virgin Olive Oil
  • 1/2 - 1 lemon juice
  • salt and pepper to taste
  • water for thinning (optional)
PASTA SALAD
  • 1 lb pasta - cooked and cooled
  • 1 cup heirloom cherry tomatoes - halved
  • 1 cup cucumber - thinly sliced
  • 1 cup avocado - diced
  • 1/2 cup corn
TOPPINGS
  • fresh basil, salt + pepper, parmesan cheese, thinly sliced red onion

Method
 

  1. Cook pasta as directed and allow to cool.
  2. In a large bowl combine—pasta, tomatoes, avocado, cucumber, and corn
  3. Combine ingredients to make hummus dressing, pour the dressing into the large bowl of pasta and veggies and mix thoroughly.
  4. Top with fresh basil, salt and pepper to taste, parmesan cheese and thinly sliced red onion. Serve and enjoy!
