Savory Chicken Kabobs over Rice

Ingredients
  

MARINADE
  • 4 tbsp olive oil
  • 1 tbsp lemon juice
  • 2 cloves minced garlic
  • 2 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
SKEWERS
  • 1.5 lbs chicken breast, cut into 1-inch cubes
  • 2 bell peppers, cut into chunks
  • 1 large red onion, cut into chunks
  • 1 zucchini, sliced into rounds
  • 2 pouches Mahatma Ready to Heat Garlic & Olive Oil Jasmine Rice

Method
 

  1. Mix all the marinade ingredients in a bowl. Add the chicken and stir to coat. Cover and refrigerate for at least 30 minutes up to overnight.
  2. Thread the chicken and vegetables onto skewers.
  3. Place skewers on a preheated grill (medium-high heat) for about 5–7 minutes per side, or until the chicken is cooked through.
  4. While the chicken rests, squeeze the Mahatma Ready to Heat pouch to separate the grains, tear the top to vent, and microwave for 90 seconds.
  5. Fluff the rice with a fork and serve the hot kabobs right on top.
