Mix all the marinade ingredients in a bowl. Add the chicken and stir to coat. Cover and refrigerate for at least 30 minutes up to overnight.
Thread the chicken and vegetables onto skewers.
Place skewers on a preheated grill (medium-high heat) for about 5–7 minutes per side, or until the chicken is cooked through.
While the chicken rests, squeeze the Mahatma Ready to Heat pouch to separate the grains, tear the top to vent, and microwave for 90 seconds.
Fluff the rice with a fork and serve the hot kabobs right on top.
