Roasted Carrots with Lemon Dill Sauce

Ingredients
  

Lemon Dill Sauce
  • 1/2 cup Hellmann's Mayonnaise
  • 1 clove garlic - minced
  • 1 tbsp fresh lemon juice
  • 1- 1/2 tbsp fresh dill - chopped
  • 2 tbsp cream
  • 1/4 tsp salt
  • 1/4 tsp fresh cracked black pepper
  • 2 tsp fresh chives - chopped
Carrots
  • 2 lbs carrots
  • 1/4 cup Hellmann's Mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp fresh cracked black pepper
  • 1/2 tsp garlic powder

Method
 

Lemon Dill Sauce
  1. Add all ingredients to a small bowl and whisk to combine.
  2. Cover and chill until ready to use.
Carrots
  1. Preheat oven to 400ยบ F.
  2. Wash the carrots and dry with a paper towel. Place on a large sheet pan.
  3. Add the Hellmann's Mayonnaise to a small bowl and mix in the salt, pepper and garlic powder.
  4. Spoon the mixture over the carrots and toss to coat completely.
  5. Roast the carrots for 35 - 40 minutes, until soft and they begin to caramelize.
  6. Place the roasted carrots on a serving dish and drizzle with the prepared lemon dill sauce.
