Pumpkin Cake

Ingredients
  

PUMPKIN CAKE
  • 2 cups all-purpose flour 
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 tbsp pumpkin pie spice
  • 1 cup oil - vegetable or canola
  • 4 large eggs
  • 1 - 1/2 tsp vanilla extract
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar - packed
  • 15 oz canned pumpkin
FROSTING
  • 8 oz cream cheese - softened
  • 8 tbsp butter - softened
  • pinch salt
  • 3 - 1/2 cups confectioners sugar
  • 1 tsp vanilla extract

Method
 

Pumpkin Cake
  1. Preheat oven to 350º and spray an EZ Foil pan with cooking spray.
  2. In a large bowl, add the all-purpose flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice and whisk to combine.
  3. In another large bowl, add the oil, eggs, vanilla, granulated sugar, brown sugar and canned pumpkin and whisk to combine.
  4. Pour the wet ingredients into the dry ingredients and mix until combined.
  5. Pour the mixture into the prepared pan and bake for 30 - 35 minutes, until inserted toothpick comes out clean.
  6. Allow to cool completely before frosting.
Cream Cheese Frosting
  1. Place the cream cheese and butter in a large bowl or the bowl of your stand mixer and beat on high until creamy.
  2. Add the confectioners sugar, salt and vanilla and beat on low until the sugar is moistened. Then beat on high for 3 minutes, until smooth and creamy. NOTE: Add additional sugar as needed to get to your desired consistency.
  3. Spread the frosting on your cooled cake, slice and serve!
