Pumpkin Cake
- Preheat oven to 350º and spray an EZ Foil pan with cooking spray.
- In a large bowl, add the all-purpose flour, baking powder, baking soda, salt, cinnamon, pumpkin pie spice and whisk to combine.
- In another large bowl, add the oil, eggs, vanilla, granulated sugar, brown sugar and canned pumpkin and whisk to combine.
- Pour the wet ingredients into the dry ingredients and mix until combined.
- Pour the mixture into the prepared pan and bake for 30 - 35 minutes, until inserted toothpick comes out clean.
- Allow to cool completely before frosting.
Cream Cheese Frosting
- Place the cream cheese and butter in a large bowl or the bowl of your stand mixer and beat on high until creamy.
- Add the confectioners sugar, salt and vanilla and beat on low until the sugar is moistened. Then beat on high for 3 minutes, until smooth and creamy. NOTE: Add additional sugar as needed to get to your desired consistency.
- Spread the frosting on your cooled cake, slice and serve!
