PB&J Oat Cups

Ingredients
  

  • 1 1/2 cups McCann's Steel Cut Irish Oatmeal
  • 1/2 cup all purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 3/4 tsp kosher salt
  • 1 tsp Spice Islands Ground Cinnamon
  • 1 1/2 tsp Spice Islands Pure Vanilla Extract
  • 2 large eggs
  • 3/4 cup whole milk
  • 2 tbsp vegetable oil
  • 1/2 cup creamy peanut butter + additional for drizzling
  • 1/4 cup Spring Tree Maple Syrup
  • 3 tbsp brown sugar
  • 1/2 cup Polaner Organic Preserves - any flavor you love

Method
 

  1. Preheat oven to 350ยบ F. Spray a 12-cup muffin tin with cooking spray and set aside.
  2. In a medium mixing bowl, add the oats, flour, baking powder, baking soda, cinnamon, and salt and whisk to combine.
  3. In a large mixing bowl, add the vanilla extract, eggs, whole milk, vegetable oil, creamy peanut butter, syrup, brown sugar and vanilla extract. Use a whisk and stir until the ingredients are fully combined.
  4. Add the dry ingredients to the wet and stir until completely combined.
  5. Spoon or scoop the batter into the prepared muffin tin, filling each cup.
  6. Bake for 22 - 24 minutes, until golden and set. Cool completely.
  7. Once cooled, cut a small piece from the middle of each muffin and fill with a heaping teaspoon of Polaner Organic Preserves.
  8. Drizzle with warmed peanut butter. Serve and enjoy!
