Mediterranean Quinoa Bowl

Ingredients
  

  • 2 cups cooked quinoa, cooled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn kernels
  • 1/4 cup kalamata olives, halved
  • 1/2 cup cucumber, sliced
  • 1/4 cup red onion, diced
  • 1/2 cup Skinnygirl Zesty Balsamic Avocado Oil Dressing - more if desired
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta
  • 2 tbsp torn basil

Method
 

  1. Combine quinoa, corn, olive, cucumber, red onion and Skinnygirl Zesty Balsamic Avocado Oil Dressing in a large bowl and toss to combine.
  2. Season with salt and pepper to taste and add more dressing if desired.
  3. Top with crumbled feta and torn basil. Serve and enjoy!
