Maple Syrup Spice Cupcakes
- Preheat oven to 350º F and line two cupcake pans with liners.
- In a medium bowl, whisk together the oil, brown sugar, maple syrup, eggs and vanilla.
- In a separate large bowl, add the flour, baking powder, baking soda, all spices and salt to a large bowl and whisk to combine.
- Add the wet ingredients to the dry ingredients and mix to combine then fold in the shredded zucchini.
- Spoon or scoop the prepared batter into the cup cake liners. Bake for 20 - 22 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool completely before frosting.
Cream Cheese Frosting
- Add the butter and cream cheese to the bowl of a stand mixer and mix until smooth and creamy.
- Add the salt and vanilla and mix to combine.
- While the mixer is on low, gradually add the sugar until completely incorporated.
- Pipe or spread onto cooled cupcakes. Top with chopped nuts, if desired.
