Maple Syrup Spiced Cupcakes

Ingredients
  

Maple Syrup Spice Cupcakes
  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tsp Spice Islands Cinnamon
  • 1 tsp Spice Islands Ground Ginger
  • 1/2 tsp Spice Islands Ground Nutmeg
  • 1/2 tsp Spice Islands Ground Cloves
  • 1 cup oil
  • 1 1/4 cups brown sugar
  • 3/4 cup Spring Tree Pure Maple Syrup
  • 2 1/2 tsp Spice Islands Pure Vanilla Extract
  • 1 cup zucchini, grated
Cream Cheese Frosting
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1 tsp Spice Islands Pure Vanilla Extract
  • 1/2 tsp salt
  • 4 cups powdered sugar
  • 1/2 cup chopped pecans or walnuts, if desired

Method
 

Maple Syrup Spice Cupcakes
  1. Preheat oven to 350º F and line two cupcake pans with liners.
  2. In a medium bowl, whisk together the oil, brown sugar, maple syrup, eggs and vanilla.
  3. In a separate large bowl, add the flour, baking powder, baking soda, all spices and salt to a large bowl and whisk to combine.
  4. Add the wet ingredients to the dry ingredients and mix to combine then fold in the shredded zucchini.
  5. Spoon or scoop the prepared batter into the cup cake liners. Bake for 20 - 22 minutes, until a toothpick inserted in the center comes out clean. 
  6. Allow to cool completely before frosting.
Cream Cheese Frosting
  1. Add the butter and cream cheese to the bowl of a stand mixer and mix until smooth and creamy.
  2. Add the salt and vanilla and mix to combine.
  3. While the mixer is on low, gradually add the sugar until completely incorporated.
  4. Pipe or spread onto cooled cupcakes. Top with chopped nuts, if desired.
