Kickin' Cilantro Grilled Chicken

Ingredients
  

  • 2 lbs boneless skinless chicken thighs
MARINADE/DRESSING
  • 1 cup packed fresh cilantro
  • 1/2 cup olive oil
  • 4 tbsp Holland House® Organic Red Wine Vinegar  
  • 2 cloves garlic
  • 1/2 tsp  kosher salt
  • 2 tbsp honey
  • 1 fresh jalapeño - seeded (or leave seeds for an extra kick!)

Method
 

  1. Place all marinade ingredients into a blender and pulse until blended and emulsified.
  2. Reserve 1/4 cup of the marinade to use as a dressing.
  3. Place the chicken in a resealable bag and pour the marinade over the chicken.
  4. Refrigerate for at least 1 hour.
  5. Grill the chicken over medium high heat and cook 4 - 5 minutes per side, or until cooked through.
  6. Drizzle with the remaining dressing (thinning with a little water if needed), serve and enjoy!
