Hash Brown Casserole

Ingredients
  

  • 32 oz frozen hash brown potatoes, thawed
  • 1 10.5 ounce can condensed cream of chicken soup
  • 2 cups shredded Cabot Seriously Sharp Cheddar Cheese
  • 16 ounce container sour cream
  • 3/4 cup melted butter - divided
  • ½ cup chopped onion
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 cup crushed crackers or corn flakes

Method
 

  1. Preheat oven to 350º F.
  2. Mix hash browns, Cabot Cheese, condensed soup, sour cream, melted butter, onion, salt, and pepper in a bowl. Transfer mixture to a buttered 9x13-inch baking dish.
  3. Mix the crackers (or cornflakes) with the remaining 1/4 cup of butter and sprinkle on top. Bake in the preheated oven until casserole is bubbling around the edges and the top is golden brown, 1 hour to 1 hour 30 minutes
