Grilled BBQ Pork Chops With Hot Pickle & Mango Relish

Ingredients
  

  • 6 - 8 thick-cut pork chops
  • salt & pepper to taste
  • 1 cup BBQ sauce
  • 1 cup Grillo's Hot Pickle Spears - cubed
  • 1 cup fresh mango - cubed
  • 1/2 cup red onion - chopped
  • 1/4 cup red bell pepper -chopped
  • 1 tbsp fresh jalapeño -chopped
  • 1/4 cup fresh cilantro - chopped
  • 1/4 tsp ground cumin
  • Juice of two limes

Method
 

  1. Prepare the salsa by combining the cubed Grillo's Pickles, mango, red onion, bell pepper, jalapeño, cilantro, lime juice and cumin. Season with salt to taste. Refrigerate until needed.
  2. Heat grill to medium high.
  3. Season the pork chops with salt and pepper and grill over medium high heat and cook about 6 - 8 minutes per side or until a thermometer inserted into the thickest part of the chop registers 145 degrees F, brushing with BBQ sauce the last 4 minutes of cook time.
  4. Allow the pork to rest for 5 minutes and serve the pork with the prepared relish.
