PINEAPPLE SALSA
- Combine all ingredients in a bowl.
- Mix gently until evenly distributed.

- Adjust salt or lime as needed.
AL PASTOR TACOS
- Heat a large skillet over medium-high heat. Add the Pork Al Pastor slices with 1/4 cup of water. Cover and cook for about 5–7 minutes (stirring occasionally) until heated through and the edges get that beautiful, charred crispness.
- Quickly warm your corn tortillas on a separate griddle or directly over a low gas flame for a few seconds.
- Pile the savory pork onto the tortillas and top with the pineapple salsa, a sprinkle of onion, and plenty of cilantro.
- Drizzle with salsa verde and a squeeze of lime.
