Game Day Pork Al Pastor Tacos

Ingredients
  

PINEAPPLE SALSA
  • 1 cup diced pineapple
  • 1/4 cup prepared tomatillo salsa verde
  • 2 tbsp finely diced white onion
  • 2 tbsp chopped cilantro
  • 1 tbsp fresh lime juice
  • ½ tsp salt (or to taste)
  • jalapeño - optional (minced, to heat preference)
AL PASTOR TACOS
  • 1 12 oz package Opaa! ReadyCarved Pork Al Pastor Slices
  • Small corn tortillas
  • white onion, finely diced
  • Fresh cilantro, chopped
  • Your favorite green sauce
  • Lime wedges for squeezing

Method
 

PINEAPPLE SALSA
  1. Combine all ingredients in a bowl.
  2. Mix gently until evenly distributed.
  3. Rest 10–15 minutes before serving.
  4. Adjust salt or lime as needed.
AL PASTOR TACOS
  1. Heat a large skillet over medium-high heat. Add the Pork Al Pastor slices with 1/4 cup of water. Cover and cook for about 5–7 minutes (stirring occasionally) until heated through and the edges get that beautiful, charred crispness.
  2. Quickly warm your corn tortillas on a separate griddle or directly over a low gas flame for a few seconds.
  3. Pile the savory pork onto the tortillas and top with the pineapple salsa, a sprinkle of onion, and plenty of cilantro.
  4. Drizzle with salsa verde and a squeeze of lime.
