Easy Pork Stroganoff

Ingredients
  

  • 2 tbsp vegetable oil
  • 1 Hatfield Marinated Pork Loin, sliced - I like the Tuscan Herb for this recipe
  • 1 onion, chopped
  • 12 oz fresh sliced mushrooms
  • 1 cup chicken broth
  • 1 tbsp Dijon mustard
  • 1 tbsp smoked paprika
  • 1 tsp salt
  • 1 cup sour cream
  • 2 tbsp chopped fresh parsley for garnish
  • Cooked Noodles

Method
 

  1. Heat oil in a large skillet over medium-high heat. Cook the sliced pork until browned. Remove to a plate and set aside.
  2. Add onion and mushrooms to drippings in the skillet and cook until tender, stirring occasionally. Mix in chicken broth, mustard, paprika and salt. Return the pork to the skillet and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes.
  3. Whisk the sour cream into sauce and stir to heat. Serve immediately over cooked noodles and garnish with parsley.
