Easy Orange Chicken

Ingredients
  

  • 1 pkg Knorr Chicken Flavored Fried Rice - cooked according to package instructions
ORANGE SAUCE
  • 1 cup orange juice
  • 1/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tbsp rice wine vinegar
  • 1 tbsp fresh ginger - grated
  • 2 cloves garlic - minced
  • 1 tbsp corn starch
CHICKEN
  • 1 lb chicken breast - cut into 1" cubes
  • 3/4 cup seasoned panko breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 cup Hellmann's Mayonnaise

Method
 

ORANGE SAUCE
  1. In a medium saucepan, add the orange juice, sugars, soy sauce, rice wine vinegar, ginger and garlic and heat over medium for 3 minutes.
  2. Whisk the cornstarch with 1 tablespoon of water to make a slurry. Add the slurry to the sauce and whisk to combine. Continue to cook for 3 - 5 minutes, until the sauce thickens. Remove from heat and set aside until ready to use.
CHICKEN
  1. Combine the bread crumbs, salt and pepper in shallow dish; set aside.
  2. Toss chicken with Hellmann's Mayonnaise in medium bowl, then dip each coated chicken piece in the breadcrumb mixture, turning to coat on all sides.
  3. To cook, preheat the air fryer to 380ºF. 
  4. Lightly spray the air fryer basket with cooking spray and arrange the coated chicken in the basket, allowing room between each piece.
  5. Cook for 12 minutes, shaking the basket half way through cook time. Toss in the prepared orange sauce and serve over Knorr Chicken Flavored Fried Rice.
