Easy Ham Fried Rice

Ingredients
  

  • 2 tbsp vegetable oil
  • 1/2 cup frozen peas
  • 1/2 cup carrots - peeled and chopped
  • 2 - 3 green onions - chopped
  • 2 eggs - beaten
  • 8 oz Hatfield Ham Steak - chopped
  • 3 cups cold cooked rice
  • 1/4 cup teriyaki sauce
  • salt & pepper - to taste

Method
 

  1. Heat 2 tablespoon of oil in a non-stick skillet or wok and add the ham, peas, carrots, green onion and egg and sauté until the eggs are cooked.
  2. Add the rice to the pan and stir fry until heated through and the rice begins to crisp about 3 – 5 minutes.
  3. Add the teriyaki sauce and toss to combine. Remove from heat and season with salt and pepper to taste. Serve with additional green onions if desired.
