Easy Cajun Sausage & Rice Skillet

Ingredients
  

  • 1 tsp oil
  • 12 oz smoked sausage, sliced
  • 1 bell pepper, any color, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 10 oz package Mahatma Ready to Heat Basmati
  • 14.5 ox can fire roasted diced tomatoes, undrained
  • 1/2 cup chicken broth
  • 2 tsp Cajun seasoning, adjust to your spice preference
  • green onions, chopped, for garnish (optional)

Method
 

  1. Heat the oil in a large skillet over medium heat and add the sliced sausage to the skillet and cook until lightly browned and heated through, about 5 minutes.
  2. In the same skillet, add the diced bell pepper and onion. Sauté until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Stir in the diced tomatoes (with their liquid), chicken broth, and Cajun seasoning. Bring to a simmer.
  5. Stir in the Mahatma Ready to Heat Rice and cook for another 2-3 minutes, stirring occasionally, until everything is well combined and heated through.
  6. Garnish with fresh green onion, if desired, and serve immediately!
