Heat the oil in a large skillet over medium heat and add the sliced sausage to the skillet and cook until lightly browned and heated through, about 5 minutes.
In the same skillet, add the diced bell pepper and onion. Sauté until softened, about 5 minutes.
Stir in the minced garlic and cook for another minute until fragrant.
Stir in the diced tomatoes (with their liquid), chicken broth, and Cajun seasoning. Bring to a simmer.
Stir in the Mahatma Ready to Heat Rice and cook for another 2-3 minutes, stirring occasionally, until everything is well combined and heated through.
Garnish with fresh green onion, if desired, and serve immediately!
